Volunteer Newsletter: Spring 2019

THANK YOU Spring Special Event Volunteers

Thank you to all the volunteers who helped us this Spring with our special events. With your help, we were able to host over 60 attendees at Joanne Chang’s Supper Club, 95 at REBA, 150 at WINE, over 350 attendees at the Boston Park Plaza during eat LUNCH give, and over 200 guests May 12th for Mother’s Day Brunch (our biggest year, yet!). The success of our Mother’s Day card campaign was made possible by the countless volunteers who helped coordinate card sales in our administrative offices, at our Prudential Center kiosk, by spreading the word to family and friends. We also want to thank the volunteer groups from Citizens Bank and State Street for donating their time to hand-write the personal messages in Mother's Day cards that make them so special to receive.

WLP relies on events like these to support our mission. Your continued support and generosity help fund our programs so that we may continue to serve up dignity each day.

We appreciate all our volunteers and enjoyed celebrating their time and dedication!

Chef Sherry's Recipe:
Easy Lemon Curd

Ingredients:

  • Egg yolks, 4

  • Sugar, 2/3 cup

  • Lemon zest, 1 TBS

  • Lemon juice, 1/3 cup

  • Pinch of salt

  • Butter, 6 TBS, room temperature

 Directions:

  1. Mix the yolks, sugar, salt, lemon zest and juice in the top of a double boiler with the water simmering (medium temperature).

  2. Whisk constantly until the mixture starts to thicken. Keep stirring until the mixture coats the back of a spoon.

  3. Remove from heat and scrape into a bowl (you can strain it if you like, which will remove the zest and make the curd smoother).

  4. Cover with plastic wrap, making sure the plastic touches the curd to prevent a skin from forming.

  5. Chill for at least an hour, until ready to serve.

Top scones, pancakes, muffins, biscuits or mix into yogurt or cottage cheese. For a complete summer dessert that will use the leftover egg whites, top with fresh berries and whipped cream onto homemade pavlova!
